I vegetable, you vegetable, it vegetables ...

I was happy to be back to my local market where my local "maraicher" or local producer had a zucchini festival among other treats!
Zucchinis come in many shapes and colors, as you see in these pictures. The little round ones are typical from Provence.
They are perfect stuffed .

The flowers can be made into "beignets", a tempura like preparation, you can check the recipe here.

I use the regular ones to make a tomato and zucchini gratin a treat so full of summer.
The local producer strives to bring to the market different and long forgotten types of vegetables.
I had written several posts on his produce, and you can check the display of tomatoes he usually has. My favorite is the Cornu des Andes variety, known as "Andes" or "Andine Cornu" in the US. The meat is rich and juicy, and the flavor very delicate.

I also wrote a post about the different types of bell peppers he sells. I have used very recently a deep purple one in a goat cheese mix where I added pistachios to make ham "papillottes"

Finally I shared with you pictures of the many types of eggplants I found in the market: round, white, deep purple, zebra like ....
