Back to an old favorite today. I'm totally in love with Adagio Tea's Ceylon Sonata. This tea hails from the Kenilworth Estate, which is lauded as producing the best whole-leaf teas in Sri Lanka. The one I have is from the highlands of Dimbula (aka Dambulla). I believe their current offering is from nearby Kandy, also a highland region. Teas grown at higher elevations tend to be more delicate and of finer quality. This is a wonderful example, IMHO.
I know some people write Ceylon off completely as an unremarkable tea. I think this comes from the fact that it is the tea that made Lipton famous. But I can attest to the fact that there are good Ceylons and bad Ceylons. I wouldn't want to drink it every day, but I really do enjoy this particular tea.
Adagio's Ceylon is a bright tea with a beautiful fragrance. The leaves are
quite long with reddish tint. I know some people prefer their Ceylon with milk, but I like it plain. (I think tea with milk reminds me of being sick as a kid. My mom would make tea with milk and cinnamon toast. Not a bad memory as memories go, but not one I want to revisit regularly.) Brewing details: 212 degrees for 5 minutes. Glass Bodum teapot...I love the plunger that lets you stop the brewing without having to remove the leaves right away.
