Louvigny exquisite chocolates in Angers

If you are in the Loire Valley, near Angers, I highly recommend you go to Louvigny Chocolates and Biscuits, located at 184 rue de la Madeleine. I attended a 3-hour guided tour on how to make (excellent) chocolate. Benoit Louvigny explained the whole process starting with the cocoa bean. He uses the trinitario cocoa bean (14% of the world production), which explains why his chocolate is so good - as opposed to the forastero bean (85% of the world production). We tasted his Peru, Madagascar, and Equator types, which are the ones he used, and this is a matter of taste. My favorite was the Peru type. We learend to describe our sensations! This is the fountain of milk chocolate ... no, we did not dip our finger - nor dive in it! We tasted many choclates, macarons, and other delicacies! My favorite chocolates are the "ganache" ones, chocolate inside, chocolate outside! Bruno candies his own oranges to prepare the famous "orangettes" or thin candied orange stripes covered with chocolate.
Bruno was kind enough to share with me a recipe of chocolate truffles that I will publish around Christmas, the time of the year when we prepare them.
