Since the beginning of the scallop (pecten maximus) season, which starts October 1st and ends in May, I have had scallops at least three times! Because it takes 2 to 3 years for a shell to grow to the size shown in these pictures, an official decree allows Coquilles Saint Jacques, as they are known in France, to be sold between those dates only.
They are wonderful with a fruity Muscadet de Sevres et Maine, produced in the Loire area, or with a fresh Riesling from Alsace.
Most scallops in France come from the north Atlantic Brittany and Normandy coast.
