Jen's Birthday

Yesterday we celebrated Jennifer's birthday with a light lunch and a cake. We made sure she made a wish before blowing the candles!
Here is the recipe of this easy and light cake:

Ingredients:
3 eggs, separated
1/2 cup powder sugar
1/3 cup corn starch (Maizena)
1/3 cup flour
1 tsp salt
1 tsp baking powder
1/3 cup "creme fraiche"
1 tsp of a scent (I used "eau de fleur d'oranger" or orange blossom water, you can use vanilla)
butter for the pan

Steps:
Heat the oven at 320 F. Butter and flower a round pan (10 inches)
Beat the whites and the salt in a large bowl until you get peaks
Add the sugar to the yolks, and the orange blossom water and beat until the mixture becomes whitish. Mix the corn starch, baking powder, and flour in a bowl and add to the eggs mixture. Mix well and add the creme fraiche.
Take 1/3 of the whites and mix carefully with the yolks mixture; once it's less dense, add the rest and mix slowly so that yo do not flatten the whites. You can mix in the larger bowl.
Pour in the pan, put in the oven and bake 25 minutes.
Let cool and serve.
